Angel food cake is your answer. It's what you do to the angel food cake that may or may not add the fat.
An angel food cake is simply a white, tall sponge cake. This means it is made without egg yolks or any other source of fat. Years ago making this heavenly delight required a deep bowl, a whisk and a very strong arm for whipping the egg whites. Today the electric mixer has simplified the task.
Making your own angel food cake from scratch will always taste the best, but it's almost as economical and definitely quicker and easier to visit your local grocery store to buy a ready made angel food cake.
Angel food cake is made special by its filling, topping or in some cases, a frosting. If you like a sweet taste, here's a quick and easy berry icing. 2 cups powdered sugar, 1/4 cup fresh berries (any kind), crushed, and about 2 to 3 teaspoons lemon juice. Gradually add just enough lemon juice until the icing is thin enough to manipulate onto the cake. You do not want to use a heavy frosting as it will push down the very light angel food cake.
Puddings adapt well to angel food cake and are quick and easy. Slice cake into three layers, spread your favorite flavor pudding between the layers. Refrigerate. Add a dopple of whipping cream when you serve it for an added touch.

Angel Food Cake
  • 1-1/4 cups cake flour (sifted)
  • 1-1/2 cups sugar
  • 1/2 teaspoon salt
  • 12 egg whites (room temperature)
  • 1-1/2 teaspoons cream of tartar
  • 1-1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract (optional)
In a large bowl, sift together flour, 3/4 cup sugar and salt. Resift 3 times. Set aside.
Beat egg whites until foamy. Add cream of tartar and continue to beat until soft peaks form. Gradually beat in remaining sugar, 2 Tablespoons at a time, until mixture holds stiff peaks.
Fold in vanilla and almond extracts. Add 1/4 flour mixture at a time, folding in gently. Then gently spoon batter into ungreased 10" angel food cake pan. Cut through center of batter 2 or 3 times with spatula to remove large air bubbles.
Bake at 350-degrees F. for 45 minutes or until top springs back when touched with finger and a wooden toothpick inserted near center comes out clean. Invert pan over bottle or inverted funnel and let stand until completely cool. When cool, loosen sides and center with metal spatula and turn onto cake platter.

Cherry Angel Trifle
  • 1 pkg. (3-oz) sugar free cherry gelatin
  • 1 cup boiling water
  • 1 prepared angel food cake (10-in), torn into 1-inch cubes
  • 1 can (20-oz) light cherry pie filling
  • 1 carton (12-oz) fat free Cool Whip
Dissolve gelatin in water; refrigerate for about 15 minutes.
Place half of the cake cubes into a 3-quart trifle or clear glass serving bowl or dish (used so the beauty of the dessert shows through). Dribble half the gelatin over cake cubes. Spoon cherry pie filling evening over top. Repeat layer. Chill in refrigerator for at least one hour.
Top Trifle evenly with Cool Whip and serve.
Makes 16 servings. Each serving is approx. 150 calories.

Tofu Manicotti*

Tofu is a complete vegetable protein food product that absorbs flavors well, and is easy to cook with. Tofu also has all eight essential amino acids. You can use tofu in place of chicken, such as in stir fry recipes. If you dine in Chinese restaurants, you may remember those white cubes of chicken in your delicious entree. Surprise ~ good chance they were really tofu.
Tofu has great benefits for weight loss because it is low in fat calories. It contains no cholesterol for those who are watching their cholesterol intake. Tofu is also low in simple sugars (carbohydrates); and low in salt content. It is further a good source of calcium and other nutrients.
    Ingredients:
  • 8 large size manicotti shells
  • 1/2 cup fresh mushrooms; chopped
  • 1/2 cup onion; finely chopped
  • 1 Tablespoon snipped fresh parsley
  • 1 teaspoon dried Italian seasoning, crushed
  • 1/8 teaspoon paprika
  • 10 oz. tofu; drained
  • 1 slightly beaten egg white
  • 2 Tablespoons grated Parmesan cheese
  • 2 oz. Cheddar cheese; shredded
Cook pasta shells according to package directions; rinse in cold water; drain and set aside. Cook mushrooms and onion until tender. Stir in parsley, Italian seasoning and paprika. Set aside, letting it cool slightly. Meanwhile mash the tofu in a bowl. Stir in slightly beaten egg white, Parmesan cheese and the mushroom/onion mixture. Stuff each manicotti shell with about 1/3 cup of the tofu mixture. Arrange stuffed shells in a 9x13 inch baking dish. For sauce: You can either use your favorite tomato sauce or make a medium white sauce.

White Sauce*
    Ingredients:
  • 1-1/4 cups fat free milk
  • 2 Tablespoons flour
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
Combine ingredients in saucepan; cook and stir until thickened and bubbly. Pour sauce over Stuffed Manicotti. Bake, covered in 350-degree oven for 25 minutes. Remove from oven, sprinkle with cheddar cheese. Bake 3 to 5 minutes longer, or until cheese is melted. Makes 4 servings.
